Kind of depends on what ammunition you use.
If you buy a subsonic .223 round, it'd kill the Turkey and do little damage to the surrounding organs and skin.

It's not as if there was only one ammunition option for .223 caliber weapons. There are many, and that doesn't even cover custom reloads. If I was shooting 5.56mm / .223 for an AR-15 I can get cartridges that go from about 55 grain (7000 grains to the pound) to 70 grain in weight and with velocities from about 1500 fps to 3000 fps. Jacket options are numerous too.
Well, in the case of home defense, I'd want something with stopping power, knockdown power, and a damn good chance the perp dies in the process as dead men can't sue you. I sure as hell don't want some asshole that B&E'd my house to still be going after the second or third time I shot his sorry ass.
