Kind of depends on what ammunition you use.

If you buy a subsonic .223 round, it'd kill the Turkey and do little damage to the surrounding organs and skin.

If I was shooting 5.56mm / .223 for an AR-15 I can get cartridges that go from about 55 grain (7000 grains to the pound) to 70 grain in weight and with velocities from about 1500 fps to 3000 fps. Jacket options are numerous too.
