That's ~1350 per day, every day of the year for 2021. That's about 85 meals an hour on a 16-hour operating day. Or, about 1.5 meals per minute.
This would require an industrial sized commercial kitchen to accomplish.
Let's say the average meal is 2 lbs. of food and waste combined. That's about 500 TONs of food a year or 1.4 TONS of food a DAY. That doesn't include packaging and such. You could expect near daily deliveries by large commercial trucks. I'd expect they'd need a loading dock and pallet handling equipment for such an operation, maybe several walk behind forklifts, pallet jacks, and such. They'd also need warehouse space and a massive amount of walk-in cooler / freezer space to handle the food.
You'd also need a head cook or chef, line cooks, sous chefs, dishwashers, line servers, bussers, and janitors for such an operation. Say, 10 to 15 people total at a minimum.
This is 2000 meals a day out of a kitchen.
