My wife is out of town helping with my MIL (who has dementia). So, I'm alone. I was going to make some beef brisket this weekend... Now it looks like I'll be making some personal sized pizza instead... I'll make the brisket on Monday.
 
Beef prices are only going up....Wife and I just were talking about Kroger offering rib roast to loyalty members at a really good price, and how maybe even with two currently in the freezer we should get one.

My son buys very high quality quarters....he says the same thing.

I have also been reading that the corps that run beef processing get most of the profit not the ranchers/farmers, and that they are working to strangle the farmers trying to work outside of their system.
