The slash the breast and thighs and deeply insert their spices deeply into the meat. I used to smoke turkeys or turkey breast every year to go along with a standard roast turkey. We have very large family TG dinners with 25 to 30 people. I just order a Greenberg to go along with the regular roast turkey now. I suggest you order one and do a taste test.
Roasting breast down then flipping half way through works very well too.

Central Market the very highest end food store around exclusively carries Greenbergs as their smoked turkeys. Buy I generally order one to my front door. As I said Oprah said it was the best she has ever eaten. She is a better food critic than a political critic. But I bet she has never eaten a world famous Zymurgy smoked turkey.
