Jesus and the New Testament constituted a new covenant between God and Christians. Leviticus is Jewish ritual, dietary, and cultural law and Christians are not bound by Jewish ritual and cultural law.
They run back to it when it comes to homosexuality.
The main reason the early Christians kept the TaNak as part of their canon was because it supposedly contained prophecy about the coming of Jesus. They also wanted to throw the Romans off their trail. They were aware the Romans were suspicious of new ritual cults, but the Romans would respect ancient religious traditions, as characterized by the ancient tradition of the TaNak
