I do have the recipe ready to go for the lengua taco... Which I suppose could be modified a bit... I can't believe the number of Taco themed shows that have been bumped lately ;)
 
Just finished about 18 quarts of Sloopy Joes for a boatload of walking tacos
.. who doesn't love walking tacos? ;)
