look for a trend in taxation

'food' items like soft drinks are up for taxation as items with no redeeming value.

carbonated drinks and fruit drinks are up for taxation

why? because they promote obesity

carbonated drinks have either caloric (various sugars) or non-caloric (various
non-nutritive artificial sweeteners) none of which are good for children

fruit drinks have some beneficial nutrients but which is better for you, an apple or apple juice, an orange or orange juice

so goes government thinking

Diet coke... does not promote obesity. "Artificial" sweeteners, despite the reputation given to them by natural food conspiracy theorists, are perfectly good alternatives to sugar. It shouldn't be taxed.
