    I'm actually a bit of both. Apparently I'm a good cook, as the neighbors, and friends all say nice things about it. Then in return, I want food now, and end up eating easy things. It's more difficult to cook when hungry. You can't focus as well, and you taste test more then you should.

    It does sound good, BUT!

    You just messed up a pan and a lid, which will need cleaning.

    And by the time you go to all that effort, you may as well have just heated the oven and used a piece of aluminum foil, which would have to be comparable to the pan method.

I got the beer part from another recipe, and just added what I want.

    I imagine my red wine short ribs would do good in the cooker, but I normally like just doing those low, and slow. I think I left that recipe in the early stages of this discussion.

    Last week, I attended the traveling Traeger Diva road show. We had a spatchcocked chicken, pulled pork, rib eye steaks, and the best brisket I have ever had. Competition level. I’ll try it one of these first days, but it is a 12+ hour cook. His brisket started at 17 pounds!

    Corned beef is brined for about a week in the fridge, isn't it?

    I don't know; I buy the packaged kind. I've made sauerbraten though that is marinated in the fridge for several days. Good stuff.

    Corned Beef of the quality I was use to in Toledo is hard to find here in the Country.
    Toledo had a big Jewish population,a lot of Jewish Deli's with Corned Beef to die for.
    That quality is just not down here.I got some from the only deli in town.Was terrible ,the baloney was better quality.
