I'm not a huge fan, but I like the films well enough. As for whether or not the franchise has been flogged to death, 3 of the 6 Star Wars films are in the top 50 highest grossing movies of all time, with the last film riding at #35 (grossed $848,754,768).
So apparently there is more flogging to be done.

It's a sequel. It's usually good to have the actors from the original appear in the sequel for continuity purposes and I imagine Episode VII occurs much later in time than episode Return of the Jedi.

The strange part is, due to the way Lucas released the films, the first movie is the 7th installment of the series. So the characters played by these aging actors are supposed to be younger than the ones they played in 1979.

No. The last three were prequels, and these three will be sequels. I imagine the main stars of these three will be the offspring of Princess Leia and Han Solo...and Luke's child or children as well.
