Heres not so much a skill but knowledge that was common at one time and used a lot at one time. rick is you need fresh laid eggs it will only work with fresh non washed or processed eggs .
But if you have chickens its great and works up to 2 years I never tried eggs in it that were that old but have had eggs that were well over 6 months old and they were fine.

Just mix in fresh water and pickling lime aka calcium hydroxide about 1 oz per qt of water if I recall properly.

use only glass or ceramic containers cover it with a cloth and stick it in a dark place like a basement or pantry or closet.
We had a lot of eggs from our chickens growing up but had eggs year round when others didnt because of this old trick .We kept a good many chickens for eating also.


But simple skills like this can result in a much easier time for for you to tolerate life in a emergency.
And if somebody is looking for eggs in the middle of jan to eat they make a great income item or trade item.
