    Default Gumbo

    Does anyone else here cook Gumbo?

    I like to make a big batch up . Then I freeze in in serving sized container. Then when I'm too lazy to cook I load my rice cooker up . Takes about 30 minutes for the rice cooker. Meanwhile I get the gumbo ready. I always cook mine in the micro wave and my wife's in a sauce pan. Because she likes a couple of eggs cracked into her gumbo and boiled with the gumbo. My wife is sort of a vegetarian. She will eat chicken broth but not chicken flesh. She also eats some fish. I like chicken Gumbo so I make two batches one with vege chicken and one with real chicken when I cook chicken. The hardest part is cooking a good roux. The rest is simple. Gumbo freezes great.


    So anyone here cook gumbo?

    I like gumbo but usually make chili. I do love chicken and shrimp gumbo. The eggs idea is interesting and I'll try it.

    I make chili also. It also freezes well and makes a good quickie dinner.

    I love alligator, darn you, now I want some. A meat market in Houston makes alligator sausage. It is wonderful in gumbo! My favorite sausage for gumbo is reindeer sausage. I picked some up in AK, the regular and hot!

    The potato salad thing is just something I have learned by living very close to Louisiana around a lot of Cajuns. I just like hush puppies and tacos (seldom eat alligator).

    Thanks. I've been to Louisiana several times; mainly New Orleans, Lafayette, Baton Rouge, Shreveport, and Monroe but always ate in restaurants, not family gatherings.

    Tastes like chicken. If it tastes like chicken but costs a lot more, why bother? I'd rather just "Eat mor' Chikin'".

    I am in SE Texas (25 miles from LA). Some restaurants include a side of potato salad with their gumbo.

    I've been to Beaumont, TX several times too. Lots of prisons there along with the obligatory signs "don't pick up hitchhikers". LOL
