No, the government doesn't control health care in single payer.
All that happens in single payer is instead of an insurance company reimbursing your provider, Medicare does it.
So it doesn't affect you or control you at all, and since there's only one payer, there are no provider networks so you don't have to pay more to see a doctor who doesn't accept your plan.
Medicare's satisfaction rating is 10-15% higher than all forms of private insurance, BTW.
