What is wrong with "average Publix eggs"? I have eaten scrambled eggs for breakfast at a posh yacht club, and they did not seem like "special eggs" to me. They are just eggs. I assume the staff bought them where ever was cheapest, though probably not at Publix, because it is not out in the Hamptons. They were not the last few Dodo eggs saved for centuries, only to be used in my scrambled egg breakfast.

If you want cheap, then go with egg mix. As long as you using real eggs, it is going to basically be the same, but egg mix is noticeably worse. If you ever have to prepare powdered egg mix for a huge number of people, and want to try to impress them, throw in a single crumpled egg, with its shell included broken into small parts. That creates the illusion of eggs being involved with the process, because people will find an occasional egg shell. That will fool them into thinking the scrambled eggs are better than they are.

Why pay more for eggs just to prove you are not a cheapskate? Publix is not convenient to me, but if it were, I would buy there. I have never been to Publix, but I assume it is not that bad.

Now cheaper places use the powdered mix rather than real eggs. That would be an issue.

You believe powdered egg mix is just as good as real eggs? I disagree, but I guess it is a matter of opinion.

My wife believes the eggs with omega something are better, but that is mostly just better when it comes to health. Again, a matter of opinion, but I do not taste the difference.

From my experience, when a yacht club wants to make scrambled eggs, a member of their staff buys the eggs from the cheapest, most convenient place possible, and moves on in life.
 
Boy I feel for the folks in Texas given that America doesn't much care about disasters anymore. With Trump's desire to gut FEMA and deny assistance it's going to be hard to watch people die.

I made a lot of cooking mistakes over the years but I never threw eggshells in with my eggs.
When you use real eggs, a small amount of egg shells always gets into the scrambled eggs. If you use the powdered egg mix, you can add the tiny amount of egg shells to give the illusion of real eggs. It is like one egg for several hundred people.

Preparing food in the military is all about conning service members into believing the food is better than it is. I never did it personally, but I have plenty of family members who did it.

It is all about the little touches, because you cannot do much about the big things.

The whole problem with a flash flood is that it is not always easy to run from. In fact, some times when you run, you end up cornered.

The Department of Education still exists. I do not think it teaches flash flood readiness, but it probably should.
