Just had a great brunch after soaking in the hot tub for a bit. In a cabin on the edge of the Wallowa Mountains in Oregon. In a few, I’ll take the dogs for a walk down to the Wallowa River to watch the redfish run.

Redfish are deep water saltwater fish here what species are you talking about?
 
I prefer ice fishing.

It really is a lot of fun. Pretty easy too. Its the cooking I can never seem to get right. No matter what I try I always end up with the same old pan of bland tasting warm water :|
 
I am a lover of red fish meat, but I prefer the taste of a fat Brown or Cut-throat Trout to Salmon.

But, you gotta love Plank-Dried smoked Salmon! Delish!
Browns between 3 1/2-5 lbs are the best. Rainbows too. Especially in the summer. We catch a lot in the winter, but the meat gets a little pale and tasteless. If I keep any, I'll usually put them in the smoker.

Weather warming up here. Nearly 70° today. Went to one of my early season fishing holes and caught supper. Nothing giant but enough for me and the missus. I go here every year in late January or early February because I have local knowledge that they’ll bite. I probably missed 10 but that’s ok…I just planned to keep 4 or 5 anyway.

It’s a rough walk over the rocks but I go every year … because I know from observation that there will come a time when I can’t.
